Tum Beekman, Sous Chef
Years ago, as a young man, Tum suddenly walked into our restaurant; “I want to be a chef, but I don’t want to stay where I work now”. Within 15 minutes he was hired, after which he started the ROC chef training and also did his internship with us. After his internship with us, he moved on to other wonderful restaurants, but eventually settled with good friend and teacher of our own Chef, Lucas Rive. There he grew into an all-round chef at Michelin Star level. After a number of Michelin Star restaurant at which he also was Head Chef, he has been back with us since 2023 as Souschef. Tum is a young talent who fits in perfectly with our experienced Chef Jeroen Bavelaar.
